Alternative Learning

Okay, so this might be a stupid question. It might also be a more general question to music theory, but I am learning guitar and guitar has such a flexible sound that it has made me think. Why is it so rare to try to learn guitar in a more creative way? Instead of learning pre-established chords and scales which "just sound right together" instead would it be a horrible idea to create your own sound as you learn? Not establishing a form through the already created ideals of generations but more focus on learning each sound of the guitar first then creating your own chords and scales (I am using those words loosely and as examples). Just a idea and maybe a dumb one that you shouldnt focus on in the beginning of your journey as I am, though words and sounds were once created and then decided on "what is right and wrong" so why not create different ones?
