Question about C chord (low E string)

Hey everyone,

Guitar beginner here, starting to learn and trying to understand some basic music theory at the same time.
I reserve a little of time of my newly daily practice routine to constructing chords and learning the notes on the fretboard, but when constructing a C major, I came to an issue.

I was letting the low E string ring string since it is part of the C chord (CEG) but when I looked at chords charts, it seemed like it's always muted.

What's the reason for that?

(sorry if it's a really basic question, but my understanding of music theory is also pretty basic soooo....^^')
